I don't remember a time in my life that I didn't view the world through the lens of "everything is energy" so what I am offering is a kind of reverse engineering of the topic. My hope is that what I share provides a way for people to grow into their innate abilities and remember that sensitivity is a strength not a limitation.
What I would like to include as a start and hope to answer in some way for all of you is that if energy is everything and there is way more going on in the unseen world than the concrete world, why is this topic considered "woo woo", new age, fringe or alternative? The next questions sort of answers the first but is much broader and frankly, a little painful. "Why do we believe that the world operates a certain way? Why has information been kept from us? Why has humanity been in the dark for so long?"
As far as "technique" goes, questions like "how do you feel energy? How do you read energy? How do we change the paradigm from thinking to sensing and from living through our heads to living from our hearts? and How do I trust my intuition?" may help build a foundation.
Other questions like. "What is meant by grounding, energetic cord cutting, space clearing, field stabilization, energetic protection, vibration, frequency, energy work, energy medicine, absorbing other peoples' energy, absorbing energy from the collective and psychic attacks?" may help fill in the holes in understanding. As will conversations around feeling other peoples emotions and knowing how to stop dig that! Also commonly misunderstood is why certain places, or particular rooms "feel" funny and what you can do about it. Along similar lines, we can have a practical discussion on how we put energy in or on food we are cooking, or in our writing of texts and emails and how to be more clean and clear around not projecting our "stuff". This is as important as shielding from other people's "stuff".
And exploring topics like, "How do practices like yoga and qigong relate to energy? What do sound healing, sage and crystals have to do with energy?" may tie up some loose ends in one's understanding. Other questions, such as "How is energy related to spiritual development?" and "Why is it so uncommon for humans to speak of and or denounce spiritual gifts like clairvoyance and telepathy?" may help with broader context. All this may lead into breaking down topics like "How is energy work related to my being more sensitive than many people around me?" "Why is the concept of empaths seemingly more mainstream right now?" and "What is channelling and why is channeling finally coming out of the closet as legit?"
I feel like once we shed some light on these questions and cover your questions and requested topics, we will have a foundation to make energy work both more smoothly integrated and more practical in your lives.

When I was young I pretty much talked to the inanimate and unseen regularly. An older brother shared two ideas with me to make me more discerning. One was that just because someone drops in from the other side (beyond the veil, etc.) doesn't mean they are benevolent. The add on to that came later and was even more helpful. Treat those visitors from beyond the veil with the same discernment, same boundaries as you would someone in a body comes into your space unannounced or uninvited or just at a bad time. Today, many people working with energy have developed specific ways for checking on the intent and vibe of the visitor and for closing off their space to visitors when they need to. I know someone who created "office hours" so she would not be interrupted during the night.
The next teaching was from someone I studied wth for a long time. And it took years, maybe decades. for me to understand what exactly I was studying. But this made sense. He said, we only think we are communicating with words but we are really connecting to one another through our nervous systems (vibration, frequency). This speaks to many areas but one important one is that we can create a tone - say, calm and grounded, for example - in our nervous systems and hold it in a way that others will feel and respond to.
And the fourth: We are always doing energy work we just aren't conscious of it. To me, that meant if we are conscious of it, the energy work we do is only limited by our imaginations. This is where once we get the concepts and some basic understanding of techniques, you can get comfortable being creative and giving the work your own spiritual signature.
